Christmas Chocolate Cookies

Ingredients:

75g - Almond flour

15g - Cococa

10g - Flax seeds

2 Tbsp - Various spices (cinnamon, cloves, nutmeg, ginger)

¼ Tsp - Xanthan gum

¼ Tsp - Baking powder

40g - Butter

1 - Egg

3 Tbsp - Monk fruit or

1 Tbsp - Stevia or ¼ cup sugar

Getting it done:

Place half of the almond flour, along with the flaxseed and xanthan gum, in the food processor and process to break up the seeds.

Then add the baking powder, cocoa and the rest of the flour.

Add the butter, the sweetener and the egg, process until everything is incorporated.

Wrap in plastic wrap and refrigerate for at least 1 hour.

Preheat the oven to 180ºC.

Spread the dough between two waxed papers and cut with a beautiful cookie cutter.

Place the cookies on a baking sheet.

Bake cookies for 5 to 7 min.

Garnish with royal icing or keto cream cheese frosting.
